Classic French cooking- beautiful !
A classic French cooking at the best form possible. Although, i believe, it is too advanced for average home cooks. It reminds me of my French culinary school days, when the beauty of classic French cooking excited me every day.

Probably Way More Complicated Than You Want to Deal With
While I'm a very adventurous home cook and have been cooking my way through the French classics, etc., since the mid-1980s, there's not a lot in this book that I'd probably ever undertake. Again and again I kept seeing "calves head" and so on.While there were enough recipes in the book (mostly the salads and desserts, and a couple of terrines), I found the book to be exceedingly frustrating to deal with because the print is so unbelievably tiny.The first thing I attempted didn't turn out and when I literally turned on the flashlight on my phone and pointed it at the page I saw what I read as 1/2 was actually 1/3. That's a difference. It said the dough would likely be sticky and that was okay, but I knew what was in front of me wasn't sticky at all.If you're a person who wants to clear a lot of time to make a single recipe, and have someone else who can make some appropriate sides, and if you like an adventure, you may enjoy this book, but it's just too much trouble to read the tiny text, and also I found myself having a hard time envisioning what was being made, with what, and how, at a glance, let alone whether I would probably like it and so want to make it.This is just not the kind of cooking and entertaining I want to do at this point in my life.

No practical purpose
Not for the home cook.. or at least in a practical way. This cookbook displays three-star-michelin-style cookery and recipes which, by the way, the most interesting are uploaded in youtube. Having said that, i do think one can get a few tips flickering through this book.

I absolutely love the variety and elegance of this recipe book!I have many of these delicious options that I want to try, and eventually, all of these recipes I will make!

Le livre présente des recettes classiques. Habitué aux images, je trouve que ce livre en manque terriblement.Je l'utilise peu finalement car il m'inspire peu.J'aime bien ce chef cependant; ce que je vois de lui sur Youtube me plaît beaucoup.Bien à vous tous

Brilliant
I must admit I pounced on this when I saw it had the recipe for beer soup that was on the telly the other night, without the very appetising little choux buns but what looks like a very tasty alternative. Since becoming older and less sturdy in the dentine department I have become a huge fan of terrines and mousses and there are some absolute cracking examples in here. I am positively twitching to get on and start on the ham mousse. The little mutton pies look delicious, and his scrambled eggs and chicken choux buns are making my mouth water just thinking about them. Haven't got my apron yet, and you may ask why I'm reviewing before cooking. This is Michel Roux Jnr, as if the recipes won't work perfectly. Apart from wrestling with a pig's head, or foraging through the entire mort of England to find a full foie gras, I'm prepared to try any of the recipes on faith as its inconceivable he would present any recipe that isn't out of this world delicious. If you don't cook, and have no intentions of cooking, then just reading this book feels like one step away from sitting in a restaurant actually eating, they look that good. Decades ago I found a fully illustrated book of Escoffier recipes, and never cooked a single one, although I have often browsed through it over the years. I cannot say the same of any of the family Roux books. They are all pretty dog eared and stained now from sitting open amongst the detritus on my kitchen worktop.

Excellent Cookbook
The best quality products cooked in the most professional way.One cannot be disappointed in any recipe, method or presentation proffered by a member of the Roux dynasty.
