Will an iPhone XR fit?

I have an adroid, the problem is the instructions are terrible. I have a piece that screws in to the phone holder, but have No idea what it is even for. The product itself, you have to fight to get your phone in holder, not an easy task by no means, shouls of not been a problem. Thanks Mike

what is the max viewing area? I want to use this to photograph my artwork.

I'm archiving full newspaper page size images with my LG LM-G820UM camera. I measured 18 X 28. Depending on camera lens, it may be more or less. My results are excellent when zooming in on detail to read. If you're considering doing multiple shots using your smartphone, get a remote shutter control for the camera. Cheap! It takes a while to set the camera to eliminate keystoneing of the picture. Once set - leave it!

can I attach a canon camera to it?

No. Even if there was an attachment, it wouldn't be able to hold the weight. I've also had issues with the light on mine.
