This miso is wonderful as a marinade or in a salad dressing. It is sweeter and less intense than red miso or the saltier, heavier varieties, so it’s very versatile. I use it mainly as a marinade for meat and tofu, in soups, and as part of salad dressings. It’s got a pleasant mild taste and great fragrance, so I find myself using it all the time. Even just a simple salad of cucumbers and this white miso is delicious. If you want a heavy, bold miso, this is not the product for you, but I find it the most useful of all the misos in my kitchen.

My only reason for purchasing this miso was to cook Chilean sea bass. It is the perfect accompaniment to this fish and makes for a wonderful sauce when frying or broth when poaching.I just placed my second order and look forward to more delicious dinners as it's not too salty and not too overpowering.

By far miles above the other shiro misos offered here. True shiro miso mild, light colored sweet with just the right amount of saltiness. Maybe superior because it’s made in Japan. Makes the best salmon Chan Chan Yaki. Just wish they’d make it available in larger more economical packages.

I needed it for a recipe but once opened you need to use the rest of the miso within a week. Not happy with that
