Can they be mounted on left side of rifle? By switching the mount around? Like griffins?

They can be mounted to the left side. However, they aren't specifically designed to do this and the windage adjustment will be reversed. Thanks

There is a bit of movement front to back under spring tension when deployed.

Any reason that these wouldn't work if mounted on the left?

I do not see why not. I have my front sight mounted “backwards” because it would not secure tightly on my top rail, but worked just fine on my right side part of the quad rail. Functionality remains the same.

Will these clear a mil spec forward assist?

Depends on the placement on the rail. I mounted mine just ahead of the forward assist. Mounted directly above it they’ll touch
