Q: Will it sharpen japanese knifes

Hello, The Chef's Choice Model 250 Hone Hybrid Electric Sharpener sharpens at a 20 Degree angle. The Chef's Choice Model 250 Electric Sharpener does not have the capability to sharpener Japanese knives with a 10-15 Degree Blade. The Chef's Choice Model 250 Electric Sharpener has the functionality to sharpener Japanese knives if they have a 20 Degree Blade Angle or a 30 Degree blade angle to be sharpened down to a 20 Degreen Angle. It is possible to sharpener the blade edge down to the next degree angle, but it is not possible to sharpener the blade edge up to the next degree. I hope this information helps. Hello. The voltage standard in the United States is 120V/60Hz. The knife sharpener will operate on a voltage between 110V and 127V. The unit is powered by a permanently attached two-prong power cord that is plugged into an appropriate electrical outlet. There is no provision for USB operation. The sharpener will not work on a 220V circuit without a converter to step the current down to 110V-127V. Hope this helps.
