Whole family likes this. We have steamed it, but the easy way is mix it in with rice in the rice cooker (measure it in the rice cooker measuring cup and fill water to the line for the total rice + amaranth cups. The cooked volume comes out less than it would be for just rice, I think the tiny amaranth go into the space between rice grains. Also they don't come out evenly mixed, you get areas with mostly amaranth and areas of mostly rice, but it's all good to me)If you're not familiar with amaranth you probably want to start with less than 15 lb, but the price per pound of this one is good, and if what President Biden says about food shortages comes true you might be glad to have a big bag of amaranth around.

I've ordered products from this company before and was not surprised to find the amaranth to be fresh and clean. However, I wonder if it is too fresh, that is, green, not quite fully ripe? Since I am not familiar with the characteristics of this particular seed/grain, I am not sure. I use grains like chia and quinoa in baking sourdough artisan breads, so I am not a stranger to supplementing wheat flour with exotic grains. The first time I used this amaranth I toasted it in a skillet and added the whole seed to the dough. The mildly toasted amaranth had a pungent aroma, not pleasant. It imparted a slightly bitter taste to the finished bread--tastes OK but not great. The second time I used it I ground the seed to flour without toasting it. It smelled green, i.e., not quite ripe, and it imparted a similar "green" flavor to the finished bread. I'm baking again today with a smaller proportion of the grain, and it definitely smells green, not something I've noticed other bakers writing about amaranth. So, I cannot say the product is less than what it should be, but that this first and only batch of amaranth seems too ripe for me.

***WARNING***This product is NOT GLUTEN-FREE. The company has confirmed that they process wheat & other gluten product on the same belt/ machines as this product. Causing a cross contamination.***This was my email/ chat questions for the company. ***Are they all processed on the same machines (gluten & gluten free products) causing cross contamination? Is your 10lbs bag (all of your products) of Amaranth Certified Gluten Free for those with a severe intolerance?Also, the Amaranth I purchased is eaten very sanding. I cannot help but to wonder & to ask what exactly is that crunchy, non desolvable by particle mixed in with your Amaranth? I've sift it, wash it thoroughly, soak it & I still get untolerable crunches of some type of dirt/ sand/ or small pieces of glass like feel in my teeth when chewing. I have learned how to best avoid some of the grit by not stirring while cooking & not eating what's left at the bottom of my pot of cooked Amaranth. Basically, skimming the top & discarding the settlement at the bottom. A waste of food but, it's how best I have experimented in avoiding most, if not all of the grit...
