"If your version of heaven has smoked meats waiting beyond the pearly gates, then PROJECT SMOKE is your bible." -Tom Colicchio, author, chef/owner of Crafted Hospitality, and host of Top Chef "Steven Raichlen really nails everything you need to know. Even I found new ground covered in this smart, accessible book." -Myron Mixon, author and host of BBQ Pitmasters, Smoked, and BBQ Rules Review: Great book - Great book to learn and guide you plus lots of great recipes Review: This book is the best place to start - If you own a smoker or are thinking of buying one. This book is the best place to start. I can't even walk past it without salivating. It is a beautiful book to have on the shelf or flick through. I bought a smoker after tasting a friends smoked fish and wanted to learn more. I'm glad I bought Project smoke as it's taken my cooking to another level. It is well laid out with inspiring photography and recipe headings. I've had to replace some of the ingredients for UK produce as I can't get bluefish, for example. However I can make smoked cheesecake or smoked bacon bourbon. I'm going to try and make smoked bread as I have a "bit of a do" later in the summer. Where I know my guests will be thrilled. Buy the book for yourself, don't show it to anyone and you'll be a Demon barbecuer.

it was written for the American market but loads of good information
I brought the hard back rather than the kindle version, has good ideas and tells you about how to get the best out of your BBQ/ smoker. I found this book to be informative and found i was doing some things wrong, it's helped me improve my awareness, and cooking skills. like are you using the right charcoal? charcoal is charcoal right? that is what I thought! what different woods to use for smoking? I found this to be a interesting book and easy to follow.

Review
I’ve used this book nearly everyday last summer for various recipes and there’s still so many that I haven’t tried. Great book for anyone starting out or wanting to try new tastes and flavours. Also a great gift for anyone who loves cooking at a reasonable price!

Perfect
So the edges and corners where a bit tatty from miss handling/transit and that's the end of the negative stuff. What a great cook book! It explains everything from types of smoker to types of wood. It talks you though what you need and why you do things to give you a good understanding of the topic and the recipes are good to. Very helpful for the novice home grilled to the professional chef.

Fantastic Book on Smoking Food
By far the best book I have got for Smoking. Well written, boat loads of good tips and advice and some fantastic looking recipes which are much easier to follow than other books I have read. I have seen a few of Steven's videos on Youtube so I already had a good feeling about his book and that good feeling has been totally confirmed. Thank You. Des

Another winner!
With 9 Weber’s registered over past 20 years, All still in use at 3 site’s total, my twin and I finally purchased a dedicated charcoal and wood chunk/chip smoker for cottage last year. Steven Raichlen has repeatedly proven why his series of bbq cooking and recipe guides are, by far, the most informative and popular on the market. “Project Smoke” is a winner! From the fundamentals of smoking and terrific info regarding types of smokers, to the classic recipes we all love, Steven touches all the bases. He even provides a few “Out of the box” type recipes to push readers boundaries in a fun way. With 100 recipes included, the big question is “Where do I start”? Texas brisket and KC ribs for me please. Sorry to all Lynx bbq brand fans. While there’s a lovely and quite costly Lynx on my patio, my go to Q is always the Weber Summit beside it. Yes, bought the Weber Smoky Mountain for the cottage…….
