is this the 26 cm blade?

Hi ed..yes this knife is the big blade...i recommend this knife to any chef ..i use for everything at work..

I received the knife, it is only serrated on the right side, not the left, is this correct? When I cut sourdough it is hard to cut the bottom crust.

This is a pastry knife, more suitable for cakes etc. You can get a bread knife, they're a bit sturdier and more suitable for a sourdough crust.

How is this knife sharpened, can ned as you would a straight edged knife using a sharpening stone?

Peronally i've used a rotary tool (eg a Dremel 3000) to individually freshen up each groove. With a light (emphasis on 'light') amount of work this can freshen up the blade considerably. I don't know how the professionals do it though. General how-to sites suggest using a knife sharpener and running the blade perpendicular to the sharpening rod/stick/tool within each groove, if that makes sense. Words elude me :)
