Will the alarm sound when it cools to a certain temperature, or just when it heats to a certain temperature?

It beeps when it is within 3 degrees Fahrenheit of the desired temp, beeps a different tone when it hits that to and a few degrees over and a third time when it's over that up to about 10 degrees over the desired temp. It will repeat those tones on the way back down as it cools. (Did a simple test boiling water and cooling back down after turning off the heat.)

How long is the probe?

It is pretty long, about 12". I don't use it frankly. It works well for some things, but I bought it for making candy. The clip is decent, better than some, but the digital readout is very difficult to read when it registers above 230 degrees F.

Does it NEED minimum amount of liquid in the pan (2" or something) in order for it to work accurately ?? Or will it work even for small batch ?

When making candy I tilt the pan when I want to check temperature so that the thermometer is submerged to a greater degree.
