would this work for a 'sensitive' instrument like a 'piezo pickup' lap harp?...thanks

It'll work, but it's simply on or off type sound. It doesn't respond to playing quietly very well, it sounds like it has a noise gate that kicks in when you pick harder. If you want full on octave fuzz then it will do the trick. But not for dynamic playing such as a fuzz face.
