It's a $70 knife
Is this knife comparable to a $200 premium German brand? Well, the phrase 'You get what you pay for' comes to mind. The knife has a good feel. The handle is well made and has an excellent ergonomic design. It's perfect. The blade is reasonable sharp but it could be sharper. The blade is also reasonably sturdy but it could be sturdier. It has a little more flex that I would normally want. Overall the knife is on the lighter side. That is both good and bad. The knife is certainly is useful. Because it is lighter than a heavy duty German brand, it is easier to handle and maneuver. Worked surprisingly well for cutting green beans. (Yes, I like use big knives for such things.) Slicing through marinated steak, wonderful. How would it handle watermelon, a pumpkin, or butternut squash? It might not be up to the task to cutting through in a safe and systematic way. I personally like to use chef knives for many small items, like green beans, onions, carrots. Often they feel much safer than smaller knives depending on the food item. So this could work much of the time. It could never be my one and only chef knife. It certainly is much, much better than getting a cheap large knife from a TV ad. I also bought a 3.5" pairing knife by Misen. The blade on that one was also of thinner steel - at least it was more flexible steel than a super premium brand. It is also $30 instead of $100 or more. A 3.5" pairing knife is the best - great for cutting Apples, Brussel sprouts, pealing Kiwi or garlic. For me, the difference between a 3.5 inch pairing knife and a 4 Ince is like the different between a meat cleaver and an axe :) IMO, that extra half inch is so unnecessary and makes it so dangerous, less sophisticated. So good for them for getting the size right. It's a very nice knife and the slight difference in steel structure from a premium won't likely bother me because the knife is so small. Back to the chef knife: It is reasonably priced and does deliver so I will probably keep it too. But I will also have a heavy one for the large items mentioned above.

My EDC of kitchen knives
6 month reviewOne of my passions is cooking, I have owned and managed several restaurants over the last 20 years never did I think I could or would use a knife in this price range. With that being said one of my employees mentioned they used Misen knives at home and was surprised by the quality. I went to their website and scoured the web for real reviews (if I could find a knife at this price point that actually was as good as the reviews I was willing to put in the time to research). I ultimately ended up buying the entire set on Amazon due to the easy return policy and of course the 2% back). Here's my impressions from day one to almost 7 months.Day 1 arrival and unboxing - All the knives arrived in premium packaging. I washed and sanitized them all preparing to use them for dinner. The knives themselves wereuch lighter than I expected and felt perfect in the hand. The material the handles are made of felt perfect . I would compare it to a ceramic with a matte textured finish. Blades were shard as they should be and ready to quarter some Cornish hens. All of the blades cut just as well as my much more expensive set. Vegetables diced perfectly. One of my favorite features about these knives it the angle at which the blades are forged. For instance the chef knife angle is different than the paring knife angle allowing each knife to perform individually perfect at the task it's supposed to do.One month in and all the blades are still Sharp. Edges are clean and no honing or sharpening needed. Although I don't use every knife every day I do use at least one or two of the set daily.3 months in and knives are still holding an edge and I decided not to sharpen them to see exactly how long I could go before needing to sharpen them. This gives me a good idea of the quality of the steel used to make these knives6 months in and all of the knives still have an edge but starting to dull. I sharpened the entire set and they were like new. I specifically used an inexpensive wet Stone to sharpen these knives instead of a honing tool so that way I could see if the average user would be able to sharpen easily.7 months since I first received this set and I'm happy to say it is now on my countertop for use as my daily knife. Since then I have ordered several different Misen products and hope they all are as good as this knife set. I'll continue to update this review .Bottom line is the quality versus value of this set is unbeatable. I purchased two more sets as gifts. You can't go wrong

Don't be dull, be SHARP!
I cook professionally & the one thing I will say Misen knives are not only sharp but hold that edge for a long time. Most home cooks will buy great cookware & small kitchen appliances, but for some reason, don't buy quality knives. Any emergency personnel will also agree that most accidents in the home, happens in the kitchen, due to a dull knife. The problem with a dull knife is that it will still cut but more pressure is applied, which actually causes a worse injury resulting with a trip to the ER. With a sharp knife, yes, one still needs to use with care but less pressure is applied yielding in a minor injury (often comparable to a paper cut). Anyway, my knives get more of a workout than "normal" usage of a home cook & I have used other brands such as Henckel & MAC etc, but Misen wins hands down for me. The knife itself is very balanced, & the handle feels very comfortable. A knife should be considered an extension of (your) hand. The blade itself is not too thick but not too thin which is also important (due to balance of the entire knife). Anyway, that is the "food for thought" of the day!

Great professional knife at a reasonable price point!
Knife is very well balanced and very ergonomic. Blade came well sharpened and is fantastic to use. Purchased the knife after combing through many reviews saying it was one of the best economical all around professional knives on the market. Also purchased a whetstone but under normal use should not expect to sharpen the blade more than once to twice a year.

A great chef's knife
So that's how tomatoes are supposed to be sliced! A great knife, very sharp. First thing if did was take a chunk out of my kitchen sponge, with barely a touch! 😀
