I have an m.2 as my bootdrive and 2x2tb mechanical for my game storage. Can I setup the 2 mechs and the optane in raid to speed up game loading times?

No, because Optane memory is already an invisible RAID setup with the hard drive you attach it to. It wouldnt let you attach it to hard drives already in RAID.

Preface this not a expert but there should be a connector for it on the MB as long as you are not using it for your Solid state memory and you are actually using solid state as a disk as you say. However since you do have a SSD and assuming you are running your OS and games from that an Optane chip is unlikely to speed up your computer much or indeed noticeable. It works as a buffer for the much slower mechanical hard drives leaving frequently accessed data in there so the second time you access it then it is quicker. If you are using an SSD anyhow for your OS games then there will not be a speed boost or not noticable.

Whats the purpose of this? im building a pc very soon can i use only ssd's? or must i have a hdd to use this? will it benefit me if im only using ssd'

This accelerates boot and program loading times when used in conjunction with an hdd. You need to setup a RAID configuration.
In saying that, I had major issues with this setup and Windows 10. I did not use it.
Install your OS on a SSD and use a HDD for storage.
