I used the product on my 15 year old leather sofa. Clean the leather with trigger spray clean n feed. I applied with my hands and finger and massage it into leather. Left it to absorb and dry on its own. You could use a cotton cloth or soft shoe brush if You wish. Google their website and put on auto translate to English if you really need manufacturers instructions. Hope this helps.

Would this be good for leather walking boots?

I am sure it would. I use it on my leather shoes and am very impressed with it. Not only does the leather benefit and become waterproof but the balm smells wonderful. I use my fingers to spread it on and work it in so as not to waste any by it sinking into a cloth, and I believe my skin benefits too!

Does this darken leather much?- My jacket has gone darker in places so want to even out the overall colour without re-dyeing it.

It will darken the leather slightly. The exact amount will depend on how clean the leather is (i.e. dye stains, grease etc) and the grain/pores of the leather. I'm afraid the only way will be to try some on a small out of sight part of the jacket.

Could I use this to soften a pair of white leather golf shoes?

I would say yes. The balm is honey coloured but rubs on clear. I used it on a very old thin leather wallet that was quite stiff and brittle and is super supple now.
