Where can I get it unglazed? I need the air to penetrate through the wall for better results.

> Never heard of unglazing. 
"Unglazed" means that no glaze was used in the manufacturing of the item (it was fired without glaze). Glaze is almost always toxic, so for prolonged fermentation, particularly involving acetic acid or lactic acid bacteria like with sauerkraut, an unglazed pot is way preferable, if only for health reasons. Certified "lead-free" glaze doesn't do the trick as glaze can also contain cadmium, barium and polymers. This seller doesn't say what glaze they are using (they probably don't know). 
As for the other properties of unglazed ceramic, you need air to penetrate the vessel when you want aerobic fermentation. You can either stir it twice a day every day for a year (who's got that much time), or use wood or unglazed ceramic, then you can get away with less frequent stirring (obligatory e.g. when making fish sauce).

I want no glaze on my ceramic if I can help it!

Please could you tell me, is this OK as a rum toft?

I haven’t used them for rumtopf. They are designed for fermentation and the air-tight release of gases. Rumtopf uses high proof alcohol and sugar to preserve fruit. The jar itself may be OK for rumtopf; however, the water seal, which needs topping up, may be unecessary, cumbersome or inappropriate.

Would this pot be good for doing whole head cabbages for wrapping sarmale? How many cabbages could it fit if so? Thanks

My wife uses this to put her Chinese cabbage in, she puts between 10 to 15 cabbage in at a time (depending on size of cabbage) with the rest of her spices, the weights go on top of the cabbage, water in the lip then put the lid on, they do settle a bit as they ferment, but the end result is great.

any idea why the water in my channel suddenly lands up in the pot

It may have different reasons:- rapid evaporation since the pot is too warm- it is too little salt in the pot- the lid creates too fine a seal to the bottom, which can result in negative pressure in the vessel due to progressive degassing. This negative  pressure then draws the water into the pot. Place a small shards or stone under the lid so that it is slightly uneven.A detailed description can be found in our brochure on pages 10 and 11 in English
