The salt quantity depends on which cheese you're making and it's added primarily for taste though also works as a preserving agent. You could add pepper, chilli, garlic, or even seaweed flakes (which are a salt substitute) instead to flavour the cheeses if you're looking to reduce salt content. I've also regularly made a number of the recipes included in the book that can be made with the cheese once you've made it, the Ricotta and Almond Cake, and Ricotta Gnocci being particular favourites.I regularly make the Crowdie, which I use as cream cheese to go with bagels I also bake myself, Ricotta to make pasta, Mozzarella for bruschetta and salads and Goat's Cheese for pizzas.Ignore Gemma's review, which is incorrect. All of the cheeses in this kit, which you should be able to tell from the list of contents above are all soft cheeses and can be made quickly and within hours. Absolutely NONE of them take 9 months. I can only assume she is either reviewing the wrong product, or her review has ended up on the wrong product because Amazon has a habit of bunching reviews together, but I can assure you as someone who has been actually using this kit for several years, and to avoid confusion in case this review goes astray, I am referring to The Big Cheese Making Kit, Ultimate Cheese Making Kit, which includes the kit and recipes for the following cheeses: Mozzarella, Ricotta, Halloumi, Goat's Cheese, Scottish Crowdie, Quasi Blanco, Labneh, Paneer, all of which take no more than a couple of hours to make.All of the recipes work well and the thermometer and moulds are all still going strong several years later. I have also since bought a Tala jam strainer that fits over a saucepan to use to strain the cheese as I personally find it works much better than cheese cloth and is much more practical as far as cleaning and reusing.I have also contacted customer services at The Big Cheese Making Kit at the email address provided on the back of the recipe book a few times with general queries over the years, and they have always responded fast and helpfully.Overall I'm glad I bought this kit, it still gets used regularly and I buy full fat milk and cream and store it in the freezer so I can then defrost them overnight to make any of the cheeses whenever I want. This works, I've been doing it for years.The kit comes with enough supplies to make tons of cheeses, depending on how much you make obviously, but it's a good kit and if you enjoy this kind of thing, or the person you're buying it for does, it will keep you entertained for a while, and the recipes for cheese and recipe ideas for what to then use that cheese for are also excellent, encouraging you to get more involved if you want to.I would highly recommend this kit. ### ⭐⭐⭐⭐⭐ Great cheese kit! *by R***Z on 7 November 2023* We had a lot fun making cheese as a family.
