Q: does it work for cat8 wire?

As long as the pineout matches i dont see why not. Why waste money on cat8 or even 6 when even 4k cameras only operate at 10/100 and under 300mhz.

Q: Going from old siamese power/bnc cabling and cameras to poe cameras. will this work for changing only the cameras to poe but leaving existing siamese?

These are meant for running cat5/6 cable between BNC cameras and DVR. You'll use two video balun's at each end of one cat5/6 run, between the BNC camera and the BNC DVR.
