Does this work well as an adhesive between polystyrene and stainless steel when underwater?

I would say absolutely, this would work well providing the job is at least 750 meters down so that the co-efficient of expansion between the dissimilar materials is more closely aligned. This would be the case at the pressure at this depth such that the polystyrene is compressed to a much higher density. Best of luck with the joints holding.

Will this glue fibreglass to wood?

I`m not quiet sure about fiber glass, but it sectinatly sticks all metal that I have used. Like S to a Blanket.

Stainless steel to stainless steel

I glued cast iron to cast iron because you really can't weld cast because extreme heat would fracture when it cools. So I used this with clamps set for around 3 days and it worked perfect. Regarding stainless Steel to stainless Steel you can get it welded by a good blacksmith and the welds sanded down. Yes you can use this bur you would have to clamp tight and leave for 2 to 3 days.
