Can the amplified noise feature be turned off?

Yes there are two volume knobs, one controls the blue tooth volume and the other controls ambient noise. They work independently of one another meaning if you are mowing the yard and want to listen to pandora, just turn the blue tooth volume up. If you are on the range and want to hear range commands turn the blue tooth down and the ambient volume up. Or combine them to listen to music quietly while still being able to join in a conversation.

Will they still allow you to hear the sounds around you while you are listening to music via the bluetooth?

Yes, the headset allows you to adjust the volume of music and the ambient noise around you independently. Great headset

Would these be appropriate for a woodshop? Would the dust have any effect on their performance?

I use them for everything, including my wood shop. I ride my Lawn mower while listening to Pandora from my phone via the bluetooth on the walkers, I jam out while running my planer/saws/drills... etc. I can't think of anything better then these walkers for a wood shop and I have yet to run into any issues from the dust. They are advertised for outdoor use so... Yes! completely appropriate for a woodshop
