quite strong and dependable multi purpose knife
i received the knife 2 days right after i oredered it!(what a very fast shipping!!), i mainly using this knife for multi task at the sushi bar where i work. the toughest task that ive done with this knife was cutting the conch, and this knife handle it nicely. just any other knifes you will need to re- sharpen it before the first time use to get the very best of it. well atleast thats what i would do to all of my knifes. for the price, this knife is really a steal! im happy with it.denny - ohio (6 years of experience sushi chef)

Not As good as the Rating
I have been using this knife on sushi rolls (hand rolls, fried rolls and cutting veggie and meats) for few weeks now. It's ok to use it as a kitchen knife but it definitely doesn't have the "sushi" knife quality. Why do i say this? because the knife has a very thick blade compare to other 200 dollars range sushi knife. This knife also comes in double edge sharpen, which is not good for cutting rolls. You have to sharpen this knife every 3 days to keep the blade sharpen. I know it's 70 dollars, i cant compare it to the 200 dollars one. If you are looking for a long lasting sharpen, easy to use, cut lighting fast, and light weight sushi knife, this one is not the knife you want. I am regret that i brought this knife because of the five stars rating. IT's an OK knife, but it definitely doesn't deserve the five stars rating. I think it's more like 3 to 4.

Very sharp well put together knife
This review used to say that the knife's measurements were off, and I gave it four stars, but the seller has updated the information, so now the listing is accurate. I think it says a lot about this seller that they listen to feedback and reviews from us customers. The knife arrived in no time flat, 2-3 days at most. It's a good knife, very sharp, very well put together. However, I think the handle feels too heavy, it doesn't feel quite balanced. But that's just my opinion. If you want a 10.5 inch multipurpose knife for cheap, this is a good option. It is obviously a quality product.I have been using this knife alone for almost a month as a sushi chef. It is perfect for all the prep work I perform as well as cutting the raw fish. The long blade handled cutting sashimi surprisingly well. Like I said this knife is very sharp. But in the hustle of the dinner rush I find this knife a bit too heavy, too long, and too awkward. It will be a perfect second knife for me to prep with, and I can tell it will last a long time. Don't hesitate to buy, excellent product from a fantastic seller.

It's an okay knife. Worth the price!
If you know how to sharpen it right, this knife will work just fine. I've been using one of these knives for over a year now. As a full time sushi chef, this knife performs better than its worth(I think) I mean compare to other knives that cost twice as much.

Best of both worlds.
It's very heavy for a 10 inch Japanese blade,Which I'm really preferenced to.It has a perfect 50/50 handle to blade balance, I can bake l balance it easily on a finger.The handle is big, even for my hands which are much larger than most.For those considering it for a sushi knife, I don't recommend it. It is thick at the spine and has A more euro style bevel. It is fantastic as a chef's knife though. To me it is rings like a euro chef knife with Japanese steel. I bought mine for 50$ at that price it is a steal. At 159$ you might want to compare this know against a global heavyweight.

the length(blade) is not 10.6 inch. Don't believe it
I had this one tonight. But the length is not 10.6(It looks like just 9 inch). I am sushi chef and I buyed this for multipurpose. I am not gonna return it but I am so mad. I feel somebody cheat me.

For the price its a very good knife. Sharpened with 1000/2000 stone and the edge is amazing. Can slice trough sheet of paper or any veggies all day long with no effort. Maintenance and sharpening/maintaining the edge isn't too hard. This is my second one and i love it.
