Is the brake of these wheels sticks out bumping into things when moving? Thanks

No. As you pull/push the object that you have attached the wheels, they will always swivel in line irrespective of the angle of movement. Clearly when stationery, you might have to give a wheel a foot tap if you perceive the "brake" protruding. Fundamentally though, not an issue.

Im having my floorboards sanded & varnished, would these leave dents in the floor when moving / if the chest of drawers is stationary for a long time?

I haven't used these castors on furniture but used them on a jig to move an external door about while carving out the recesses for hinges etc.. They performed very well, in your case I can see no problems arising as long as the floor finish is first class.

Are these suitable for an armchair and a small 2 seater sofa?

I've used them for a wooden filing cabinet . I had to use different screws as I was scared of splitting the wood. The filing cabinet only has to be moved on rear occasions so it's not daily. They are very robust so I would assume they would be OK for you

Are they suitable for outdoor?

I don’t think they are meant for outdoor but that’s where mine are, under a large plant pot stand on my patio. They have been outside for 2 years and there is a slight sign of rust but they are working fine. At the price, you can replace them cheaply anyway.
