Excellent value slicer
I bought this for my Christmas prime rib roast. I prefer English cut roast beef, so I make thin slices. This was better than my parents’ electric carving knife that they’ve historically used. Even slices just came off the roast. It had a little trouble getting through the seared crust of the roast - by trouble I mean that the knife’s own weight would not cut through the crust so I had to actually pushed, but after just moving the knife back and forth was enough. Comes extremely sharp and I recommend getting some sort of sleeve for it. I also have a 14” honing steel which when gently used for the second roast seemed to keep it at brand new sharpness. Regarding ergonomics, the big goofy plastic handle is wonderful. It doesn’t slip and it’s comfortable in my hands. I’m very pleased with this knife for slicing beef roasts, which is the specific purpose I bought it for. I’ve not used it for anything else. So if you want a roast beef knife, this one is sharp, has help up through a few dinners, is still razor sharp, and it’s like the cheapest in class. I recommend it.

Love this slicer, great for meat!
I alsolutely love this slicer! As with all Mercer products I've bought, it is a quality knife at exceptional value. The handle is very comfortable and feels solidly attached. Their steel always strikes a good balance imo, it comes sharp, and it holds a sharp edge, but if you're good with your crock sticks or stones you can get it much sharper and it takes an edge fairly easily. I love the design of this specific knife for slicing meat. The blade is long, narrow, and thin, making it great for slicing up any large cut of meat, like tri tip, turkey breast, or pork belly, and I use it to cut up ribs, too. It'll slice through very tender ribs with no effort and without removing the meat, and the narrow design makes it easy to follow the curve of the rib bone. I've tried a lot of knives over the years, both less and much more expensive, and most of the ones I've kept are Mercer. There's a reason they're still a big name in the culinary school and foodservice industry- excellent knives that are sharp, easy to clean, and comfortable at a great value! Even if you don't buy this one check them out!

Excellent Value
Mercer knives are excellent quality at a good price. I replaced my expensive, brand name knives with these. The slicing knife is thin, has just enough give, and is extremely sharp. Sliced my roast beautifully.

Sharp watermelon knife but not rust proof
I have been using this knife for cutting watermelon and it always does a good job. Clean and easy cut on the big watermelon. It’s very sharp so be very careful when handling it. However a month later, I found some rust on the knife blade even I tried my best to dry it with kitchen towel each time after I used it. I also attached a video showing the sharp side of it and the rust on it after a month’s use. So the money is a little bit expensive for this non rust-proof product.

Incredible Value – Feels Like a Professional Set Without the Price
Incredible Value – Feels Like a Professional Set Without the Price I bought a full lineup of Mercer Culinary Renaissance knives: paring, utility, bread, 7" Santoku, 8" & 10" chef’s knives, 14" slicer, plus the ceramic honing rod. After real use, here’s the honest takeaway: 👍 What Stands Out Very sharp out of the box – not “good enough”… legitimately sharp Excellent balance and control – comfortable even during longer prep Consistent performance across every knife – no weak link in the set Bread knife actually works – cuts crusty bread clean without crushing Slicer is outstanding – smooth, long cuts with no tearing Ceramic honing rod keeps the edge dialed in easily 👎 Any Downsides? They’re sharp enough that you’ll notice if your technique is sloppy (not really a con—but worth saying) Like any quality knife, they need proper care (hand wash, dry, occasional honing) 💡 Real-World Use These knives have handled: Dense vegetables (sweet potatoes, squash) Proteins (raw and cooked meats) Fine prep (herbs, onions, garlic) No slipping, no fighting the blade—just clean, controlled cuts. 💰 Value for Money This is where Mercer wins. These perform like knives that cost significantly more. If you’re upgrading from entry-level knives, the difference is immediate. 🔥 Bottom Line If you want reliable, sharp, well-balanced knives without overspending, this set delivers. Would I buy them again? Absolutely.

Very sharp, very durable, ergonomic and priced well for the quality and feel.
Started curing and smoking pork belly to make bacon. I have a meat slicer but needed either a bigger one to slice long pieces of bacon or this knife. This thing is a monster and devastatingly sharp. I am looking forward to making my next brisket as I now have a knife that will cut through a whole packer without issue. It has a little spring to it but stays straight enough that every slice of bacon came out perfect. You could spend a LOT more on a similar knife but I don't see any reason why you would need to. The grip has a great feel and shape as well as aggressive texture. I have some other Mercer knives and have never been disappointed in any of them.

Nice Sharp Knife for Brisket
I recently got into smoking meats and have done a couple of briskets so far. The first one wasn't very good and was difficult to slice with the large chef's knife that came with my knife block set. It pretty much destroyed it's appearance. So after doing some research, I found these long knives were good for slicing brisket. My second brisket was great and I used this knife to slice it with good results. I was able to get nice thin pencil sized slices easily without massacring the appearance of the brisket. It came from the package extremely sharp. Probably the sharpest knife I've ever felt. But that edge didn't seem to hold after slicing up the first brisket, but it was easy to sharpen and bring that edge back with my sharpener. The handle/grip is nice and this feels like a professional culinary tool. I only wish that it came with a sheath. I had to purchase one separately because you don't want this thing getting banged around in a drawer, or cutting yourself while reaching around for it. So if you buy this, but the sheath that Mercer sells specifically for this knife. It's a perfect fit.

Tiene un buen tamaño. Muy filoso, corta cualquier tipo de carne como si fuese mantequilla. Se convirtió en mi favorito. Si detecto problemas más adelante, actualizaré mi reseña pero por ahora, lo recomiendo.
