Don't make mayonnaise if there is a thunder storm in the forecast that day, it won't emulsify. The 4 steps I have followed successfully are: Step 1: place eggs, oil and spices into large blender with blades. Blend on high till thoroughly combined, using a small scraper to get any spices that stuck to the side incorporated into the mixture. Step 2: slowly blend half the oil in a trickle into the egg mixture. To do this without making a huge mess in the kitchen, I drape a dish towel over my pouring hand, place the tip of a measuring cup with the oil into the spout opening, fold the spout cover down as far as it will go, cover the whole business with the towel, and slowly pour a small stream the size of a pencil into the pitcher while blending on Dough or Crush (low or medium). You can slow down if you think it will help but I haven't found it to be very fussy about how quickly I add the oil. It will begin to wobble the machine once the emulsion occurs, and you may need to hold the base or lock it to the counter to stabilize the machine. Turn off, scrape down, repeat if the sides are covered with oil. Step 3. Dump in the acid (vinegar or lemon juice) and blend all at once quickly, scrape down sides, then blend again. Emulsion will be slightly looser after adding vinegar, but still thickened. Step 4: As in Step 2, trickle in the remaining portion of oil on medium (crush) speed, and expect the wobble and strain of the increased thickness of the emulsion till all the oil is blended in. Scrape down. The resulting product may be much more runny than you expect compared to a commercial mayonnaise out of a store bought jar. Finally, as you folks stated, the rubber nubs wore off, and the rubber "sealers" on top of the base, just fell out and wouldn't go back in. So, we purchased a new Ninja back in January 2020, same model. I can tell you, 100%, this is NOT the same as my old one. It might look identical, but the performance, is no where NEAR as good. Every single time I use it, it makes a burning rubber smell. I have a feeling it will not last long. The rubber sealers in the base, have already come out. Very disappointing. **Q: noise level??** A: This critter is noisy. But you can always wrap a blanket around it to cut down on the noise. Since my wife sleeps much later than I, it is best if I find a way to muffle the thing because I use it very early in the morning. **Q: Where is this product manufactured?** A: Take a wild guess haha but this thing is incredible..no joke. This one is by far more than quadruple the quality. The blades are quick and powerfull. Blends all the way through 98% of the time. I'm sure the 2% is my user error. The 3 blades are very nice and are the reason why it blends so smoothly. cleaning them is a little difficult so I suggest rinsing the blades with hot water immediately after you are finished blending to avoid scrubbing so much. The jug size is large and is easy enough to fit lots of various ingredients. The main motor hub is really powerful, it is loud but not as loud as some of the more cheap blenders. This one is very simple and has only 3 speeds and a pulse option, which in all honesty is all you need. The buttons are the membrane push buttons for easy cleaning they feel durable. there are a few safety features for the lid to prevent turning on the unit without the lid. The handle is ultra comfortable and plastic is very durable so far mine is not scratched at all. Overall it's an amazing Blender and I brag about it to my friends since even though they have blenders they hate blending every morning. So far I have been making a smoothie every day for the past 3 months that I've had this thing. It's still going very strong! ps. Blends protein powder into your smoothie very quickly!
