Will this grinder grind flax seed?

I found that it grinds flax seed just fine - maybe better than coffee beans. I have fitted an O-ring in the top of the lid which prevents the grinding dust from escaping all over the place.

how much coffee will it grind at one time? (i.e. what's the maximum capacity?)

Read the book that came with the grinder. It tells the exact amount. I grind 3-4 heaping tablespoons of coffee beans at a time for a 12-cup percolator coffee maker and it does a great job. It is so efficient and so easy to use. I like that the grind cup comes off to empty the ground coffee. I highly recommend this product. FYI, I am a 77 year old Granny and am very particular about my household products. I want them to work as stated and I need ease of use. This one rates high in all categories. I have recommended it to several people. I stand by my word too.

Do any of the spices "leak" under the blades and into the main body of the grinder when in use? Thanks!

If by "leak" you mean escape from the metal canister at the shaft the answer is, no. I am 100% with this unit for spice and coffee with no complaints. I do find that finer grinds accumulate under the blade and are more densely packed then above it and when that needs to be uniform I manually stir the contents loosening that pack with the back of a spoon and run the machine a second time for a more uniform grind.

What is the power of the motor? Watts?

I cant help here...but I will say I have ground lots of whole bean coffee and spices and it has all the power it needs.
