Hi, buckwheat buyers - i can't read russian & i feel the description is a bit vague, are these groats raw or pre-roasted? thank you!

You cook it like rice, same process: 1:2 (grain to water). Wash grains, drain, add to boiling salty (to taste) water, cook 20 min (5 min on medium, then on low). Add butter, let rest 5-10 min, enjoy. We usually eat the buckwheat w/ sliced tomatos. Goes well as a side dish for any meat (stewed, roasted, chops, burgers ant so forth).

Do these groats sprout if soaked? Are they raw?

These groats are roasted. I was very disappointed since the roasting or over- roasting gives a very strong flavor. They are dark , very brown, which raw buckwheat is not. I wish I had known before ordering.

Do I need to rinse this before use. It has a very strong smell and tasted bitter. I am using it to mill for flour.

I rinse before use to remove dirt, but I never make flour, just cook it as a cereal. I guess you could rinse and then dry it really well before milling it into flour.It shouldn't taste bitter, especially if it is not expired or near the expiration date. Some pieces of grain or nuts do happen to taste bitter sometimes in an otherwise fresh and good tasting batch.

They are ROASTED, not parboiled ! They're a whole grain, not instant in any way. AND take approx. 20 minutes to cook after brought to full boil and turned down to low. For recipes--> it takes about 2 hrs to cool on the counter-top (in the pot you cooked them in) and 45 minutes to cool in refrigerator in the pot. They stay fresh up to 2 wks in the frig covered.
