Perfect Curds and Firm Pickles For Cheesemaking (My Primary Use): A small, precise addition of this powder (following standard recipe guidelines) dramatically improves the firmness and yield of the curd, especially when working with pasteurized or store-bought milk. It compensates for the mineral loss during pasteurization, ensuring a clean, strong set every time. For Pickling and Brining: This is where the magic really shines. Say goodbye to soggy pickles! The flakes dissolve quickly and cleanly in water, leaving no sediment.
