I would like to use the lantern hook for a solar water bag. Is it strong enough to hold around 30#?

Wouldn’t recommend it. Definitely strong enough for a good size lantern but I had to hang my solar bag in the tree outside.

Can you open (extend) just the table section or do you have to expand the whole thing each time?

You have to extend the whole thing each time - but this is the idea - have the stove on the left and prep on the right. It is a kitchen after all.

How high off the ground is the prep counter? And how high is the stove counter? Thanks

It's about 30 inches and with a stove on it the stove counter is about 27 inches. Normally, I use a chair when I'm cooking. Get a five foot gas hose. It makes changing bottles so much easier. And, the stove counter can be attached on either side. The Pack Away needs to be handled carefully. I really like mine.

Will the side table hold a 35lb camp chef stove?

I just answered the question with the oven and table. It will support the weight, BUT, the oven has feet that need to be lined up with the supports on the stove section, which is precarious so another top would be needed. The oven is also inches from the table top, which means whatever is on it could get hot. The oven instructions say 12" from other surfaces. It's a nice unit, but for me, not for the oven.
