Great!
This high temperature cheese is perfect for making sausage in my smoker. The high temperature helps when smoking because it does not break down during the smoking process and remains in a small cubes. Flavor and texture are as expected.

Good taste, good product!
This cheese was fantastic! I made 10lb of homemade smoked cheddar jalapeno sausage and used this cheese for my recipe. It was the perfect size for my hog casing sized brats and it held together great while mixing and stuffing the meat. It melted once I grilled the sausage for consumption, but not before. This bag makes a lot of sausage, espcially if you go with a 10% cheese to meat ratio like I do. Placed it in the fridge and it should last for a year (or until my next batch). I would recommend this cheese.

Good shelf stable cheese
I know this is suppose to be for making sausage but I was trying to find alternative to the freeze dried cheese which they have hiked the cost of. I stumbled across this decided to try. Just threw some of these small cubes on my burrito. So good. The cheddar cheese taste like it should its not bitter or any other weird off taste. I need shelf stable cheese. I dont suppose your company would consider making smaller packs? You already do better cost wise then those other jerks. I want to try your mozza cheese but you seem to only sell that in the big pack. I will be trying the Pepper Jack next.

Tastes great holds up well

They work perfectly for making venison sticks!

Used this with AC Legg No. 10 seasoning and Bearded Butcher jalapeño flakes and powder. Delicious!

Excellent product.
My husband puts this in his goose salami. Because it's high temp it does not melt in the smoker when they cook and cure the salami. It's a great quality product.
