Then I apply a liberal shot of freshly ground black pepper and a healthy dose of Kosher salt. I pop it into a 450 degree oven for 30 minutes, then reduce temp to 325. Cook to 165 in the thickest part of the thigh area.

In my opinion, no. Its a great spice but I wouldn't consider it something I would use in a Cajun recipe!
