A: Powdered glucoamylase enzyme.

**Q: Does this replace the alpha amylase? or the Beta Amylase?**
A: My husband uses alpha amylase to convert starch to fermentable sugars. He uses glucoamylase to further convert the starches that were not converted by the alpha amylase. His experience/use  is for distilling, and he has never used beta amylase. He has also been experimenting using alpha amylase in bread making.
