## Description

Full Body, with a Deep rich Chocolaty Flavor, and a clean finish. Smooth Milk Chocolate, with Tones of Honey, Caramel and Cocoa. Organic Certified. This Coffee is an exceptional Honduran coffee from the Marcala region. No chemical inputs are used. The cherries (fruit of the coffee bean), are composted and used as fertilizer, along with vermiculture, and fewer insects are present at the altitude that it's grown, so no insecticides are necessary. If there ever is a bug problem, farmers sometimes plant peppers as a repellent. The coffee is very dense, and thus has depth of flavor and we are able to roast it just right to bring out it's natural flavor characteristics and a wonderful sweetness. All our coffees are roasted fresh to order in multiple small batch roasters (30-60 kilos) at our facility in Miami. We are a family of growers and roasters, laser-focused on quality, and because of our volume and innovative model, we are able to deliver an excellent quality certified organic coffee, at a price that represents a considerable value.

I forget exactly which one it was but the flavor and brew tasted perfect. It might have been the Ghirardelli brand and It was the best cups of coffee I've ever had. I own a Keurig and enjoy Starbucks coffee but this holiday pack of coffee seriously tasted the best. It was creamy, robust, and not bitter at all. With that said, Keurig and Starbucks brew excellent coffee but nothing compared to that once in a lifetime cheap gift bag. I have no idea why that coffee tasted amazing. All I can think of is the combination of beans, roast, grind, freshness, hint of chocolate and brew that made it the most enjoyable cup of coffee. Perhaps it was partially my morning breath or the amount of chemicals in the water that day, who knows. Anyway, onto the review of this organic coffee... I just got done drinking an entire pot of this stuff that was brewed in my percolator brewer, Texsport 9 Cup Stainless Steel Percolator Coffee Maker for Outdoor Camping and the coffee tasted fantastic! It reminded me of that once in a lifetime cheap gift bag coffee. I'm so thrilled since this coffee has become the best tasting coffee I've ever had. The reason I ordered this 2lb bag is because I want to save the Kcups for the weekday convenience and brew this on the weekends. My wife and I drink way too many Kcups during the week and need to come up with a new plan for our massive coffee consumption. During the weekend I end up drinking several Kcups and wanted to start brewing pots again which is the primary reason for the percolator. # Pros - Medium-dark was exactly as I expected. I like bold coffee but not burnt tasting like Starbucks and not weak like McD's. - Beautiful beans. Grabbed a handful for inspection prior to shoving them into the manual grinder. - By far the best tasting coffee brewed in my percolator. - Organic and I like what they are doing. - Best quality for the price. - Rich and creamy bold flavors, hint of chocolate. Not bitter or sour tasting. # Cons - None. With the pros and cons out of the way, I would like to mention; I'm no "coffee connoisseur" and don't pretend that I'm an expert in taste testing coffee. I simply enjoy drinking coffee. I remember that gift bag coffee being one of the best I've ever brewed. Sure I have a problem and need to have my morning coffee, my afternoon coffee, and evening coffee... I'm a software developer by trade and I drink a lot of coffee. The best coffee is the one that you remember and sure it could be McD's, Tim Hortons, etc... I've consumed a lot of coffee from numerous coffee shops here and have not experienced the "wow" moment like I did with that cheap gift bag coffee and I did with this. I have brewed so many different K-cups and the brands I enjoy the most are the Newman's Own and San Francisco Bay Fog Chaser. If you enjoy those brands, I recommend this coffee but please note, this coffee does not taste like the brands mentioned. For those wondering about brewing this in a percolator... I ground the coffee beans in a manual grinder - Most Consistent Hand Coffee Grinder & Coffee Press - Ceramic Burr Manual Coffee Grinder fits in Aeropress - set on a course grind setting (kosher salt). I use the water from my RO system. 1 heaping table spoon of grinds per cup. Watched the glass viewer on the percolator get to the right color. Pour and enjoy.
Review: Pictures Don’t Lie - Beautiful and Delicious! - A Google search of “fresh roast coffee bean appearance” brings you this; “Glossy Appearance: Fresh roasted coffee beans typically have a shiny, glossy surface due to natural oils and aromatic compounds rising to the surface during roasting. This is especially true with dark roast.” I have included photos of these new beans alongside two other “high quality”, and both more expensive beans, so you can see them as a comparison. All 3 were properly packaged in airtight breathable valve bags, like these Subtle Earth Beans. From the moment you opened the bag of Subtle Earth, the wonderful aroma and visual superiority was quite evident, and even surprising. The beans were smaller, but very uniform in size and color, with a beautiful sheen and visible oils, and there were hardly any ugly beans. On the contrary, the comparison beans (one of which is the very popular Volcanica beans) the majority of them were ugly beans, cracked, split and extremely dry looking, as well as a wide variation in color/darkness. The smell of the comparison beans was noticeably off and weak compared to the Subtle Earth beans. On to the important part – our first brew of Subtle Earth Organic Coffee made the most delicious cup of coffee I’ve had in a while! As long as they consistently maintain this quality, Subtle Earth is my bean of choice!

**Q: does anyone know if this coffee is mycotoxin free? or if they use the "wet process" of roasting? is it shade grown? Thanks!**
A: Hi Kristy, I apologize for the delayed reply, I did not know this question and answer section existed.  I could go on and on about how some folks make money by creating a problem out of nowhere, and then charge for the solution, but instead I will refer you to this article:  http://authoritynutrition.com/the-mycotoxins-in-coffee-myth/By "wet process" they are referring to how the coffee fruit is processed at origin, not how it is roasted.  All of our coffees are wet processed except for some of our Brazils, and they are absolutely some of my favorite coffees!  They are both dry processed and "semi-washed," and as a result are extremely rich and complex.  We use it in our Signature Blend to add body and what I refer to as richness (some actually consider this harshness, but most self-proclaimed coffee aficionados love it).  The Brazil plays very well with the Colombia in the blend, which has a much milder body character but is sweet, and the Guatemala has considerable depth of flavor, but is very smooth. The Guatemala is shade grown, and our farms in Colombia are Rainforest Certified.  All of our other coffees either are or they are not shade grown.  We source based on quality first, and _usually_ that criteria automatically includes environmental responsibility (if it doesn't then we address that through our Sharing Certified program).  Besides being environmentally friendly, when you grow coffee in the shade, it deprives the plant of sunlight, and the beans take longer to mature.  The longer they take, the denser they are, and there is a lot of flavor in that density.  Guatemala and Honduras do this best, and the soil in those countries is full of sulfur from the volcanoes, and coffee plants love sulfur, so it's an ideal environmnet. All of our coffees, whether wet or dry processed are roasted for around 20 minutes at temperatures above 400 degrees, then we pack immediately into a high moisture barrier bag.  We roast to order, and don't require large minimum orders from our customers.  We ship to Amazon every two weeks, so the coffee is super fresh always.  I should add that we roast in multiple small batch roasters, and because of this we do not have to "quench" the coffee to cool it, like many/most other bigger brand roasters.  When big brand roasters, roast in 2,000 - 5,000 LB batches, water is sprayed on the roasted coffee beans to cool it, so it doesn't continue to roast (and burn) in it's own heat.  I actually spoke to an engineer once who retired from a big brand roaster, who said he designed their system to add an ounce of water weight to each can, so they could increase their margins.  This was back when they were packing in cans, and he said you could see a ring of rust around the top inside of the can.  We would never compromise quality or Food Safety for added profit, and we want only to provide the freshest, best tasting coffee possible to our loyal customers.Hope this helps! **Q: I bought a 2 lb bag of your coffee but was not vacuum sealed.  Air passes freely in and out of the plastic valve, why is that? Does it affect flavor?**
A: Hi PetarB, thanks for your purchase!  Fresh roasted coffee requires a degassing valve that allows the naturally occouring CO2 to escape the bag, while not letting any oxygen in.  We roast to order, in multiple small batch roasters, and fill the bags immediately after roasting, so if we didn't use a degassing valve, the bags would puff up and possibly rupture.Coffee that is packed without a degassing valve must sit for several days before being packed, and a "Nitrogen Flush" is often used to keep the packaging from "exploding."  This type of coffee is usually very inexpensive, is produced in large volume, and is meant to sit in warehouses, distribution centers, and store shelves for a very long time (months and even years).Hope this helps. **Q: Is there a way to find out how much caffine it has in it?**
A: Hi Charyl, thanks for reaching out!  That's a little tricky to answer, as caffeine levels vary depending on the bean used (Arabica vs. Robusta), level of roast, and your preparation.  We use only 100% Arabica, and roast most of our coffees to medium-dark, so you get a lift, without getting nervous or jittery, and no upset stomach.  Coffees with higher levels of caffeine are either a lower quality Robusta bean, a significantly lighter roasted Arabica, or caffeine has been artificially added to an unnatural level.  On another note, some people mistakenly equate bitterness (usually from dark roasted coffee) to strength (caffeine level), when in fact a darker roasted coffee has less caffeine (unless it has been artificially added). I wasn't expecting a lot with this purchase but the reviews drew me in. Making the first cup and tasting it with nothing added... Just black, is the only way to know it's true taste. This one hit the mark. It has a good bold taste and beautiful dark color. The beans are beautiful as well. Dark and shiny. Adding that it is a low acid coffee as well is just a bonus. This one satisfies.
