The 7-year aged rice is so much more expensive. is it really worth the price?

I shared your thoughts as well. I am of North Italian heritage where risotto is prepared in a variety of marvellous ways. This is an excellent risotto. It is vacuum sealed in the can and ages one year. I think that any risotto that is vacuum sealed, even in vacuum sealed plastic bags will be the best. Rice that is only in cardboard boxes will not respond well to the long, reducing cooking process of traditional risotto. All vacuum sealed Arborio is more expensive. Bottom line: try it and evaluate the results! I bought it again and I buy vacuum sealed risotto rices wherever I can find them. I do not waste my money on dry risotto from a box.
