Is the ship big enough to sail from america to france?

I don't know about America to France, but it certainly can sail a sea of 1x1 studs from our 21042 Statue of Liberty to 21019 Eiffel Tower! (The ship actually measures about 3" high, 5.5" long, and 2" wide.) Happy building, Emily LEGO® Service

Will the bottle hold rum?

People give up too easy. Using hot glue or a bag would look terrible and also not function well. Seal the inside with ultra clear expoxy. If done correctly it won't leak. I love the idea of filling it with rum. I might have to try that.
