MCP has been our go to for many years
My mother, my grandmother, and my wife will only use MCP in their home-made jam. If you put the work and effort into making home-made goodies you have to trust the results. We also love the convenience of home delivery. Our local stores are sometimes out.

MCP to the rescue!!
I bought this because my jam didn’t set. I thought I had bought MCP originally, but I bought surejell. Surejell you have to cook on the stovetop, while MCP you can just mix in. I made two batches of strawberry freezer jam using Surejell and neither set. I measured and followed directions exactly. I remembered this version is not always successful.I looked for MCP in several stores, but could not find it even though it’s supposedly available. Amazon to the rescue! I added some lemon juice (since MCP needs it and the original Surejell did not) and followed the instructions for “if your jam didn’t set.” It was still syrupy but the next day it was set. Yippee!!Every time I have used MCP the jam has set. It’s so much easier to use and more successful than Surejell. I know Surejell makes both products, they should make this more readily available.

Give it time!
I used this for making home made jelly (which I had NEVER done before).In the end, I got a thick strawberry syrup. I was a little bummed that the pectin didn't set, even after it cooled.Well, next morning, I checked the jar in the fridge and it set beautifully.The moral?Don't rush things. Pectin takes a little time to set properly. make sure you use the right amount of everything (pectin, sugar, other things like lemon juice...) in your recipe, and then make sure you give it enough time to not just cool, but for it to set properly! If everything is done right, it will.Making jelly was a lot of fun, and when I run out of what I bought, I will buy more of this pectin, here, because it really does work.
