Are you able to grind small dry seeds (like cumin) and herbs, like thym?

My guess is that you probably can grind cumin and (especially) coriander seeds in a Peugeot pepper mill but I am not certain that you would be happy with the results. I do not believe that the Peugeot can grind these seeds finely enough. As for thyme seeds, I am skeptical that it can. Don't bother trying turmeric root. They are too difficult to grind. Spice grinders are not expensive. I use a spice grinder and am very happy with the result. By the way, when grinding spices such as cumin and coriander, be sure to toast them first.

It was not designed for that. Chocolate is too soft and the unit isn't easy to disassemble if clogged up. If you need to grind chocolate you might be able to use a grater or a mandolin...with care, of course!

Can it grind all colors of peppercorn? Including pink and green?

Yes, it does well with all colors. Pink you will want to do mixed with another color. But it is one of the best grinders I have used.

Can you grind coffee with this?

The part that holds the peppercorns is tiny, so unless you only want to grind one cup at a time, I'd go ahead and buy a much less expensive coffee grinder.
