Q: Anyone here own both this knife and one of the even less expensive Sekizo yanagibas? Wondering if the addl cost for this knife is worth the upgrade?

This is a knife designed for sushi meat/fish cutting/slicing, has a longer and narrower blade that can be used for a long stroke slicing to get an even cut/thing piece of meat or fish. Nice knife, quite sharp, not too bad of the quality for the price, but it is not necessary for everyday kitchen use. However, for sushi lover, not too bad of choice to own it.

Q: can use for de-skinning fish like salmon?

yes you can de-skinning fish but not too big like salmon because the knife only 8 inch

Q: Is this left-handed knife?

You can use it with both hands I believe. It is only sharpened on one side.

Q: Does this have a flat side (single bevel)?

This is a 21 cm/8-3/8-inch Yanagi single-edged knife. The left side is flat, and the bevel is on the right, that is, "asymmetrical."
