Q: What is the height between the shelves?

25 inches from surface of bottom shelf to the bottom of the upper shelf and 22 & 5/8 inches from the top of the rail on the bottom shelf to the bottom of the upper shelf

Q: how does it roll over carpet?

It will roll over carpet fine. The only problem you may have with this cart is that the 4 supports between the top and bottom shelf of the cart just pop together. If you have something heavy on the bottom shelf and lift the cart by the top shelf, it may separate the legs between the shelves and you will have to pop them together again.

Q: I ordered a two shelf cart. however it came with 3 shelves. how do i convert it to a 2 shelf cart? the middle shelf is causing problems.

The Luxor Cart I ordered and as illustrated on the website where I saw it, only had the bottom shelf and the top shelf. The 4 legs that joined the top shelf to the bottom shelf were ea. 4 sided square tubes that pushed into the bottom of the top shelf and pushed into the top of the bottom shelf. If you received a third shelf, you did not receive the correct cart. Or if your 4 legs are solid tubes and will connect the top shelf to the bottom disregard the 3rd shelf and don't use it.
