World champ thickening agent!
I ordered this CMC powder to thicken up a ceramic glaze I had been struggling with to make brushable. Whoa, does a little go a long way! The instructions on the back suggest using up to 1% (in your foodstuff) so I diligently measured some liquid glaze, then some powder. After stirring, shaking, then whisking, I have a giant purple snot blob. Okay, take two: my glaze comes as a powder, so I tried mixing 0.5% CMC with the powder first, then adding water. The results were easier to mix, but I still have a gloop instead of a glaze. Third time’s the charm? I tried making up a 10% solution of CMC in water first. Good thing I started small in a large jar because I kept adding water to dissolve the globs until I ended up with about a 1% solution. Which eventually dissolved when left overnight. This is easier to add to my glaze, but *still* too thick. To summarize my adventure, use waaaaay less than you think you’ll need. I’ve heard it can become a petri dish if stored the way I have it, so keep it in its handy lil’ resealable foil package until you need it. I’ve gotta try it in food next since that is what food grade means… The quantity for the price is an outstanding deal. I recommend it for thickening off-label things too.

Effective at thickening just about anything.
The bag seems a bit on the small side, but a little goes a long way with this stuff, and the seal of the bag as well as how flat it is actually ends up being quite convenient for storage, can just slot it in next to my recipes in the pantry. I tried using this in various recipes, including a gluten-free bread, a gravy for SOS that turned out a bit too thin and watery, and also in a couple soups and drinks just for the heck of it.In everything I used this with, it honestly worked very well and just fixed my problems in the case of too-thin consistency, giving a nice crumb and overall consistency to the gluten free bread I made with it, and turning some drinks into something like applesauce...well that wasn't so much a fix but it was amusing. I would definitely recommend trying this out yourself if you're looking for an effective thickening agent, or even if you just want to mess around with some chemicals in the kitchen!

CMC powder for gluten-free sauces and baked goods.
This packet contains pure CMC powder. This powder comes in handy for thickening, sauces, and for baking for people who might have gluten related allergies. I used it to thicken some sauce when cooking for somebody who is gluten-free. I have not used it for gluten-free bread baking, but it is supposed to provide a better and more even crumb without using gluten.

good gravy!
I've been embarrassed about how difficult I've found getting my weaksauce gravy to be the right consistency and I think this is what I've been missing all along. It's so much easier than cornstarch and less clumpy than flour. I'm so glad I tried this!

Great for Ice Cream
This is my first time experimenting with CMC powder, and so far, so good. I have a Ninja Creami and love making unique ice creams, but I don't love using cream cheese or pudding to make them creamy. This powder seems to have a nice creamy effect and cuts down on the icing just a bit. I haven't tried it in a sauce yet, but I will when my gluten-free sister comes to visit. The package is relatively flat making it easy to slide in your baking drawer or tuck beside your row of flour. The package reseals nicely so you don't have to decant it into anything else for safekeeping. It appears to be produced in Canada so I don't worry that I'm adding a product of questionable origin.

Loved this stuff
I had never used CMC powder to thicken soups, sauces, or gravies before; I had only used it to harden fondant. So when I saw that this powder could be used as a thickener, I had to give it a try. I was impressed! Typically, I would thicken those dishes with cold water and cornstarch, but with this CMC powder, I was able to simply add a small amount directly to my hot liquid. It thickened right up without any lumps. It was incredibly useful and quick, and I will definitely order more!
