Q: What is the difference between a "mineral b" and a carbon steel de buyer 12.5 skillet.

I have no idea...I don’t own a de Buyer carbon steel 12.5” skillet!

Q: Can this pan cook Acid base foods without any problem?

As with any carbon steel pans, what matters most is how you season the pan. You cannot buy a carbon steel pan and use it like stainless steel. You have to season the pan at least 6 times before using it and then it will have a protective layer which will allow you to cook acidic foods and also allows you to use it like a non-stick pan.
