the diameter is seven eighths (7/8) of an inch.

Anyone know where to purhcase a 1/4-20 Washered Wing Nut that is actually made of stainless steel?

I'm almost 100% positive they do not exist. Due to the washer they cannot be made in stainless.

The existing plain type of nut uses a 7/16" socket to install on the bolt, will this wing nuts work for this bolt size?

Yes, the 7/16" socket fits a 1/4" nut which is the same size as this wing nut. The driver for this wing nut looks like a socket with a slot cut to fit over the wings. Works great on a drill if you have a lot to install or remove.
