More a comment! It is ridiculously difficult to know what the dimensions are for this oven as they differ & even Sage hasn't supplied the answer yet

Update: I did purchase this oven and am very happy with its functionality. According to my measurements the external dimensions are: Width = 47.5 cm Depth = 43cm Height 28 cm. Internal dimensions: Width = 35 cm Depth = 29 cm Height 18 cm. The MAXIMUM dimensions for cookware to fit inside would be no more than 34.5 x 28 cm.

How does this compare to Ninja or Cosori?

I have the Ninja air fryer oven/grill at work and while it is very good, the Sage is still much better in my opinion. More even and precise cooking and more versatile.

Can this oven dehydrate foods in the manual settings, and how long can this run under low temperature setting?

Although there is no dehydrate function, most foods are dehydrated at temperatures of 54 °C and the manufacturer states the SOV860BSS4GUK1 has a lowest temperature of 49°C. Dehydrating foods can take anywhere from 5 to 14 hours and again, the manufacturer has stated the 'Slow Cook' function can run up to 10 hours. Unless Sage can explain otherwise, theoretically I see no reason one will no be able to dehydrate foods on the 'Slow Cook' setting, adjusting the temperature to requirements.

Can you fit two trays in at the same time? For instance air fry a pizza on one tray and air fry chips below on another tray?

Yes, multiple air fry baskets can be used in the Sage® SOV860 Smart Oven® Air Fryer but adjustments to time and temperature would need to be made to compensate for the extra food.
