Does this shirt have removeable collar stays, or are they sewn-in?

They are removable. My husband bought metal ones that he prefers over the plastic ones that are provided with the shirts.

is this shirt wrinkle free?

Mine d the didn't come wrinkle free, very wrinkled, and got a white mark in one spot. Shame it's a nice blue.

How much extra materiel hangs over after its tucked in?

Not a lot at all; it is pretty fitted for me wearing a 15 32/33 at 5’7”, 155lb and 31” waist. Of course this will vary with your dimensions. Personally I find the sleeve to be more like a 33” when I really need a 31.5/32 so I get extra fabric in the arm. To resolve this I roll the sleeves up a lot but I can do that in my work place or if I’m wearing a blazer or coat it is fine. But, they aren’t customer shirts obviously and I get complements on them.
