What size spice jars will fit inside?

Jars up to 4.5 cm or 1 and 3/4 inches diameter fit In under the lip. I didn’t measure height but my standard supermarket herb jars fitted fine.

What's maximum weight that can be held in these if there is one?

Well the plastic rail is only held on by double sided sticky tape so I wouldn't overload it with heavy items. A few small spice jars might be ok I'd imagine. I use mine to contain clutter like pens, sellotape, sticky labels.

Would you please clarify the depth of the product, how long should the foil be? Will the foil fall if pushed towards the end(back)?

It fits normal roll length. If you push it too far back it would eventually fall out...it never has. Saves room and a good idea.

Will it work in a fridge for small bottles of protein drinks

I don't think so. The tabs that hold the shelf are for 15mm/18mm shelves and the fridge shelves are much narrower than that. Also the undershelf rack is stuck into place using double sided tape and I don't think that will work very well on a cold glass/plastic surface.
