I am measuring my current (broken) cap to be 2.75 inches- I assume that means this 2 inch cap will not fit?

The threaded portion is about 2-1/4" diameter and the top of the cap is 2-7/8" Diameter. The 2" refers to the clear passage of a pipe attached to the threaded portion.

Is the 3/4 knock out threaded on bung cap?

Yes, 3/4 NPT, but the hole needs to be opened by drilling or cutting.
