How is this fabric with cat hair?

I have a cat and he LOVES this couch cover. I haven't noticed his hair on it, although he is black and the cover is charcoal. It hasn't been an issue for me, and I even brush him on the couch with the cover on it. I have to say, side note, it is a great fit and the 2 pieces (one piece for the cushions and one for the rest) is a MUST. It is washable too if the hair is a real concern. I like to just use a lint roller to get rid of loose hair on furniture.

My seat cushions are attached on the bottom so will this cover work?

My sofa has three separate seat cushions and I would like to wrap them individually (instead of wrapping al 3 in 1). How/what do I need to order?

I would check with the manufacturer. I am not aware of a slip cover that offers three separate cushion covers. You could order 3 chair covers, which would provide 3 cushion covers and 1 couch cover but that is very expensive option.
