The manufacturing process of cat6 makes them a bit stiffer and thicker. They are still 24g UTP cable just wrapped tighter (hence the extra stiffness) and have an isolator between pairs causing a bit bulkier stature. They can be bent as much/less as any cat 3-6 cable can be so there are no limitations between them.
