They are silicone with rubbery feel. They are all metal with a silicone covering.

What is the length of these?

Average lenth same as regular of almost any utinsel. As far as exact length not sure. But will say the best set I have ever used, color will not fade, or stain. I recomend to anyone who cooks to use this product. Very very well made.
