Can these be used on plastic switch plate covers?

I believe they can stick to the plate covers. Kind of tricky getting it cut out. try it, you can peel it off if the design doest suit you.

Are the outside edges of these finished to look like grout?

No, they are not. You would have to create the look yourself by using spacers or lines.

Will this damage the paint on a wall if removed? Im in a rental with ugly walls, but they wont allow me to paint them.

Not at all! the adhesive is not real sticky, easy to pull on and off. Great for what you are looking to use it for..the only thing is if there's a paint drip on the painted wall ,the tile will tend to fall off if not on a flat surface.

Im considering using this is a covered outdoor kitchen. While not in direct weather it is a high humidity area. Will this work in this setting?

I installed them as a splash guard above the bathroom sink 6 months ago, and so far they are holding up. For your project you might want to use thin coat of Contact Cement on the door when you install the self adhesive tiles. Just a peace of mind knowing they aren't going to move in the heat and heavy traffic area.
