This conversion would be right for UK imperial quarts (quarter of a gallon, or 2 pints) but the pots are sold in quarts for the US market and so the conversion needs to be for the US ANSI standard where a pint is smaller, 16 ounces, not 20. Therefore 8 US quarts is in fact 7.57 litres. This is why you see some instant pots, Instant Pot Pro Crisp for instace, beeing sold as 7.6L in the UK and EU.
