Can you fit more than one kind of herb? I would like to store cilantro and green onions, parsley in this.

You can fit as many herbs in here as you'd like. Cilantro, green onions, and parsley all would work.

anyone using this to accumulate and drain table scraps before composting like a mini bokashi?

I haven't tried that, but I see no reason why it wouldn't work for that purpose.
