Do not know the answer to that. The bag I got was full of broken rice, so it was not very nice for anything but gruel and the flavor and texture were not what you would expect.

Can you make risotto with this ?

No, I wouldn't & I am a chef. I find this rice very sticky & clumpy after it's been made. Use Aborio rice for risotto. Also, I have been rinsing this raw rice 1st until the water runs clear of all the milky starchy water & it cooks up better. This would be the perfect rice for rice pudding though.

is this good for red beans?

This rice will be wonderful with red beans. Great combo!

That is a great question and I wish I had the answer. I don't have the packaging and information anymore but I'm going to do some research and try to find out. I'll let you know if I am successful in my search.
